Quick Sautéed Asparagus Bits

Looking for a quick dish for dinner? This quick sautéed asparagus is great tossed over pasta, sprinkled hot over a cold salad, or eaten straight out of the pan. Quantities are totally flexible — adjust them to your taste and level of hunger. Enjoy!

Ingredients

  • 1 bunch fresh asparagus
  • Olive oil
  • 2–3 cloves garlic, minced or sliced
  • Salt and pepper to taste
  • Optional: lemon juice, red pepper flakes, parmesan

Instructions

  1. 1Wash asparagus and snap off the woody ends. Cut into 1–2 inch pieces (the 'bits').
  2. 2Heat a splash of olive oil in a skillet over medium-high heat.
  3. 3Add garlic and cook for 30 seconds until fragrant.
  4. 4Add asparagus bits and toss to coat. Cook 4–6 minutes, stirring occasionally, until tender-crisp and lightly browned.
  5. 5Season with salt and pepper. Finish with a squeeze of lemon if you like.
  6. 6Toss over pasta, scatter over a cold salad, or eat straight from the pan.

The 'bits' cut is the key — more surface area means more browning and more flavor. Don't cut them too small or they'll cook too fast.
