Spicy Black Bean Quinoa Burgers

These are the veggie burgers that make people stop saying they don't like veggie burgers. They hold together, they have real flavor, and they get a proper crust on the outside. The quinoa adds texture and protein, the black beans bring the heartiness, and the spices make them genuinely exciting.

Ingredients

  • 1 can black beans, drained and rinsed
  • 1 cup cooked quinoa
  • 1/2 cup breadcrumbs or oat flour
  • 1 egg (or flax egg for vegan)
  • 1/2 red onion, finely diced
  • 2 cloves garlic, minced
  • 1 tsp cumin
  • 1 tsp smoked paprika
  • 1/2 tsp chili powder
  • Salt and pepper
  • Olive oil for cooking

Instructions

  1. 1Mash black beans in a large bowl until mostly smooth with some texture remaining.
  2. 2Add quinoa, breadcrumbs, egg, onion, garlic, and all spices. Mix well.
  3. 3Season generously with salt and pepper.
  4. 4Form into 6 patties. Refrigerate 20 minutes to firm up.
  5. 5Heat olive oil in a skillet over medium-high heat. Cook patties 4–5 minutes per side until a dark crust forms.
  6. 6Serve on buns with your favorite toppings.
