Bold Winter Greens Salad

Winter greens - kale, radicchio, endive - are bitter, bold, and beautiful. This salad leans into that bitterness with a sweet, tangy dressing that balances everything perfectly. Add some toasted nuts, a little cheese, and you have a salad that actually satisfies.
Ingredients
- 2 cups lacinato kale, thinly sliced
- 1 cup radicchio, shredded
- 1 head Belgian endive, sliced
- 1/2 cup pomegranate seeds
- 1/3 cup toasted walnuts
- 2 oz shaved Parmesan or pecorino
- For dressing: 3 tbsp olive oil, 1 tbsp apple cider vinegar, 1 tsp Dijon mustard, 1 tsp honey, salt and pepper
Instructions
- 1Massage kale with a pinch of salt and a drizzle of olive oil for 1–2 minutes until slightly softened.
- 2Combine kale, radicchio, and endive in a large bowl.
- 3Whisk together all dressing ingredients until emulsified.
- 4Toss greens with dressing.
- 5Top with pomegranate seeds, walnuts, and shaved cheese.
- 6Serve immediately.
