Chia meets banana in this creamy, coconut-milk pudding that doubles as a post-run refresher or a light dessert. The chia absorbs the water first, then gets folded into a blended coconut-banana base. Chill and serve - it's that simple.

Ingredients

  • 1/2 cup water
  • 1 tbsp chia seeds
  • 1/2 cup coconut milk
  • 1 banana
  • 1/4 tsp vanilla or ground cinnamon
  • Pinch of salt

Instructions

  1. 1Combine water and chia seeds. Let sit until water is absorbed, stirring occasionally to prevent clumping.
  2. 2Blend coconut milk and banana together until smooth.
  3. 3Pour the coconut-banana mixture into the chia mixture along with vanilla or cinnamon and salt.
  4. 4Stir to combine, then chill and serve.
