Chia meets banana in this creamy, coconut-milk pudding that doubles as a post-run refresher or a light dessert. The chia absorbs the water first, then gets folded into a blended coconut-banana base. Chill and serve - it's that simple.
Ingredients
- 1/2 cup water
- 1 tbsp chia seeds
- 1/2 cup coconut milk
- 1 banana
- 1/4 tsp vanilla or ground cinnamon
- Pinch of salt
Instructions
- 1Combine water and chia seeds. Let sit until water is absorbed, stirring occasionally to prevent clumping.
- 2Blend coconut milk and banana together until smooth.
- 3Pour the coconut-banana mixture into the chia mixture along with vanilla or cinnamon and salt.
