Chocolate Chia Pudding

25 minServes 2

A restorative, not-too-sweet chocolate chia pudding built on a base of frozen berries, avocado, and cacao - perfect after a run or workout. The avocado gives it a silky richness, the berries add natural sweetness, and the chia sets it into a thick, satisfying pudding.

Ingredients

  • 1 1/2 cups frozen berries
  • 1 cup water or nut milk
  • 1/2 avocado
  • 2 1/2 tbsp cacao powder
  • 1/4 cup chia seeds
  • 1–2 tbsp maple syrup (optional, for added sweetness)

Instructions

  1. 1Blend the berries, water or nut milk, avocado, cacao powder, and maple syrup (if using) until smooth.
  2. 2Pour the mixture into a container and stir in the chia seeds.
  3. 3Refrigerate for about 20 minutes until the chia seeds have absorbed the liquid and the pudding has thickened.
  4. 4Stir once more before serving.

Jennifer's tip

This is intentionally not very sweet - it's designed to restore and nourish after exercise. Add maple syrup if you want something more dessert-like.
