Chocolate Chia Pudding
25 minServes 2
A restorative, not-too-sweet chocolate chia pudding built on a base of frozen berries, avocado, and cacao - perfect after a run or workout. The avocado gives it a silky richness, the berries add natural sweetness, and the chia sets it into a thick, satisfying pudding.
Ingredients
- 1 1/2 cups frozen berries
- 1 cup water or nut milk
- 1/2 avocado
- 2 1/2 tbsp cacao powder
- 1/4 cup chia seeds
- 1–2 tbsp maple syrup (optional, for added sweetness)
Instructions
- 1Blend the berries, water or nut milk, avocado, cacao powder, and maple syrup (if using) until smooth.
- 2Pour the mixture into a container and stir in the chia seeds.
- 3Refrigerate for about 20 minutes until the chia seeds have absorbed the liquid and the pudding has thickened.
- 4Stir once more before serving.
Jennifer's tip
This is intentionally not very sweet - it's designed to restore and nourish after exercise. Add maple syrup if you want something more dessert-like.
