Chocolate Power Balls
20 minServes 12
Dense, fudgy, and packed with almonds, dates, hemp seeds, and cacao - these no-bake power balls are the perfect thing to have in the fridge when you need a quick hit of real energy. Roll them in ground cashews and hemp seeds for a satisfying finish.
Ingredients
- 1/3 cup almonds, soaked 3 hours and drained
- 1/3 cup pitted soft dates
- 2 tbsp nut butter
- 1 tbsp hemp seeds
- 1 tsp vanilla
- 1–2 tsp water or nut milk
- 1/2 cup cacao powder
- 4 tbsp ground nuts for garnish (hemp seeds and cashews work well)
Instructions
- 1Put all ingredients except the cacao into a blender or food processor. Blend or pulse on low until combined.
- 2Pour the mixture into a large bowl and stir in the cacao powder.
- 3Roll into bite-sized balls. If too dry, add more water; if too soft, add more cacao or refrigerate briefly.
- 4Roll each ball in the garnish mixture.
- 5Refrigerate until ready to serve.
Jennifer's tip
Soaking the almonds is worth the planning ahead - it softens them just enough to blend smoothly while keeping that satisfying bite.
