Chocolate Power Balls

Dense, fudgy, and packed with almonds, dates, hemp seeds, and cacao - these no-bake power balls are the perfect thing to have in the fridge when you need a quick hit of real energy. Roll them in ground cashews and hemp seeds for a satisfying finish.

Ingredients

  • 1/3 cup almonds, soaked 3 hours and drained
  • 1/3 cup pitted soft dates
  • 2 tbsp nut butter
  • 1 tbsp hemp seeds
  • 1 tsp vanilla
  • 1–2 tsp water or nut milk
  • 1/2 cup cacao powder
  • 4 tbsp ground nuts for garnish (hemp seeds and cashews work well)

Instructions

  1. 1Put all ingredients except the cacao into a blender or food processor. Blend or pulse on low until combined.
  2. 2Pour the mixture into a large bowl and stir in the cacao powder.
  3. 3Roll into bite-sized balls. If too dry, add more water; if too soft, add more cacao or refrigerate briefly.
  4. 4Roll each ball in the garnish mixture.
  5. 5Refrigerate until ready to serve.
