This mousse is proof that healthy desserts don't have to be sad. Silky pumpkin purée whipped with coconut cream and warm spices, topped with jammy figs and crunchy salted pumpkin seeds - it's elegant, seasonal, and comes together in minutes.

Ingredients

  • 1 cup pumpkin purée (not pie filling)
  • 1 can full-fat coconut cream, chilled overnight
  • 2 tbsp maple syrup
  • 1 tsp vanilla extract
  • 1 tsp cinnamon
  • 1/4 tsp nutmeg
  • 4 fresh or dried figs, halved
  • 2 tbsp pumpkin seeds, toasted with a pinch of salt

Instructions

  1. 1Scoop the solid coconut cream from the chilled can (discard or save the liquid).
  2. 2Beat coconut cream with a hand mixer until fluffy, about 2 minutes.
  3. 3Fold in pumpkin purée, maple syrup, vanilla, cinnamon, and nutmeg until smooth.
  4. 4Spoon into glasses or small bowls.
  5. 5Top with fig halves and salted pumpkin seeds.
  6. 6Serve immediately or chill up to 2 hours.
