Eat Your Greens Sandwich

This sandwich is proof that eating your greens can be genuinely delicious. Layers of peppery arugula, creamy avocado, crispy cucumber, and a bright herb spread on good bread - it's fresh, satisfying, and comes together in minutes.
Ingredients
- 4 slices good whole grain bread, toasted
- 1 ripe avocado
- 2 cups arugula
- 1/2 cucumber, thinly sliced
- 1 cup sprouts or microgreens
- 4 radishes, thinly sliced
- For the herb spread: 1/4 cup Greek yogurt, 2 tbsp fresh herbs (dill, chives, parsley), 1 tsp lemon juice, salt
Instructions
- 1Mix together Greek yogurt, fresh herbs, lemon juice, and a pinch of salt for the herb spread.
- 2Mash avocado with a fork, season with salt and a squeeze of lemon.
- 3Spread herb mixture on two slices of toast. Spread avocado on the other two.
- 4Layer arugula, cucumber, sprouts, and radishes on the avocado side.
- 5Close the sandwich, press gently, and slice in half.
