Eat Your Greens Sandwich

This sandwich is proof that eating your greens can be genuinely delicious. Layers of peppery arugula, creamy avocado, crispy cucumber, and a bright herb spread on good bread - it's fresh, satisfying, and comes together in minutes.

Ingredients

  • 4 slices good whole grain bread, toasted
  • 1 ripe avocado
  • 2 cups arugula
  • 1/2 cucumber, thinly sliced
  • 1 cup sprouts or microgreens
  • 4 radishes, thinly sliced
  • For the herb spread: 1/4 cup Greek yogurt, 2 tbsp fresh herbs (dill, chives, parsley), 1 tsp lemon juice, salt

Instructions

  1. 1Mix together Greek yogurt, fresh herbs, lemon juice, and a pinch of salt for the herb spread.
  2. 2Mash avocado with a fork, season with salt and a squeeze of lemon.
  3. 3Spread herb mixture on two slices of toast. Spread avocado on the other two.
  4. 4Layer arugula, cucumber, sprouts, and radishes on the avocado side.
  5. 5Close the sandwich, press gently, and slice in half.
