Oats cooked in coconut cream with saffron, turmeric, and dried goldenberries - this is Jennifer's personal morning ritual in a bowl. The saffron turns everything golden and fragrant, the goldenberries add a tart chew, and a pat of cultured vegan butter at the end makes it feel truly luxurious.
Ingredients
- 1/2 cup oats
- 3/4 cup water
- 1/4 cup coconut cream
- 1/4 tsp fresh minced turmeric (or dried ground)
- 3 strands saffron
- 8–10 dried goldenberries
- Pinch of black pepper
- Miyoko's cultured vegan butter for garnish (optional)
Instructions
- 1Bring oats, water, and coconut cream to a boil.
- 2Once boiling, reduce to a simmer and stir in turmeric, saffron, goldenberries, and pepper.
- 3Cook until oats reach desired consistency.
- 4Garnish as you like - a small pat of cultured vegan butter adds a salty, creamy finish.
