All of the Fig (none of the 'Newton') Bars

These are what Fig Newtons always wanted to be. A tender oat-almond crust, a jammy real-fig filling, and none of the preservatives or mystery ingredients. They're sweet, satisfying, and feel like a treat - because they are.

Ingredients

  • For the crust: 1.5 cups rolled oats, 1 cup almond flour, 1/4 cup coconut oil melted, 3 tbsp maple syrup, pinch of salt
  • For the filling: 2 cups dried figs, stems removed, 1/2 cup water, 1 tbsp lemon juice, 1 tsp vanilla

Instructions

  1. 1Preheat oven to 350°F. Line an 8x8 pan with parchment paper.
  2. 2Make the filling: simmer figs with water, lemon juice, and vanilla over medium heat for 10 minutes until soft. Blend until smooth.
  3. 3Make the crust: combine oats, almond flour, coconut oil, maple syrup, and salt. Mix until it holds together.
  4. 4Press 2/3 of the crust mixture into the prepared pan.
  5. 5Spread fig filling evenly over the crust.
  6. 6Crumble remaining crust mixture over the top.
  7. 7Bake 25 minutes until golden. Cool completely before cutting.

These keep in the fridge for up to a week and freeze beautifully - make a double batch.
