All of the Fig (none of the 'Newton') Bars

These are what Fig Newtons always wanted to be. A tender oat-almond crust, a jammy real-fig filling, and none of the preservatives or mystery ingredients. They're sweet, satisfying, and feel like a treat - because they are.
Ingredients
- For the crust: 1.5 cups rolled oats, 1 cup almond flour, 1/4 cup coconut oil melted, 3 tbsp maple syrup, pinch of salt
- For the filling: 2 cups dried figs, stems removed, 1/2 cup water, 1 tbsp lemon juice, 1 tsp vanilla
Instructions
- 1Preheat oven to 350°F. Line an 8x8 pan with parchment paper.
- 2Make the filling: simmer figs with water, lemon juice, and vanilla over medium heat for 10 minutes until soft. Blend until smooth.
- 3Make the crust: combine oats, almond flour, coconut oil, maple syrup, and salt. Mix until it holds together.
- 4Press 2/3 of the crust mixture into the prepared pan.
- 5Spread fig filling evenly over the crust.
- 6Crumble remaining crust mixture over the top.
- 7Bake 25 minutes until golden. Cool completely before cutting.

These keep in the fridge for up to a week and freeze beautifully - make a double batch.
