Garden Gazpacho

A vibrant, dairy-free gazpacho verde inspired by the green gazpachos of Spain. No tomatoes, no cream - just pure green and clear ingredients blended into something refreshing and alive. Perfect before Halloween to sneak in extra greens, or any time you want something cool and nourishing.
Ingredients
- 1 cucumber
- 1 green pepper
- 1 green apple
- 1 green onion
- 1 cup parsley
- 2 cloves garlic
- 1/2 poblano pepper
- 1/4 cup olive oil
- 1 tbsp white wine vinegar
- 1 tsp salt
- 1/4 cup water
Instructions
- 1Cut up the larger items for easy blending. De-core the apple.
- 2Add everything to a blender and blend until smooth.
- 3Taste and adjust salt or vinegar as needed.
- 4Serve chilled, garnished with small pieces of reserved cucumber, apple, and parsley.

Save a little of the cucumber, apple, and parsley before blending to use as a beautiful garnish on top.
