Healthy Veggie Pot

Think of this as a hug in a bowl. A deeply savory, vegetable-packed broth with tender chunks of potato, carrot, and whatever else looks good at the market. It's the kind of meal that makes you feel genuinely taken care of - and it comes together in one pot.

Ingredients

  • 2 tbsp olive oil
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 3 carrots, sliced
  • 3 stalks celery, sliced
  • 2 medium potatoes, cubed
  • 1 cup green beans, trimmed
  • 1 can white beans, drained
  • 6 cups vegetable broth
  • 1 tsp thyme
  • 1 tsp rosemary
  • 2 cups kale or spinach
  • Salt and pepper to taste

Instructions

  1. 1Heat olive oil in a large pot over medium heat. Add onion and cook until softened, about 5 minutes.
  2. 2Add garlic, carrots, and celery. Cook 3 more minutes.
  3. 3Add potatoes, broth, thyme, and rosemary. Bring to a boil, then reduce heat and simmer 20 minutes.
  4. 4Add green beans and white beans. Simmer 10 more minutes.
  5. 5Stir in kale or spinach and cook until wilted, about 2 minutes.
  6. 6Season generously with salt and pepper. Serve with crusty bread.
