Think of this as a hug in a bowl. A deeply savory, vegetable-packed broth with tender chunks of potato, carrot, and whatever else looks good at the market. It's the kind of meal that makes you feel genuinely taken care of - and it comes together in one pot.
Ingredients
- 2 tbsp olive oil
- 1 onion, diced
- 3 cloves garlic, minced
- 3 carrots, sliced
- 3 stalks celery, sliced
- 2 medium potatoes, cubed
- 1 cup green beans, trimmed
- 1 can white beans, drained
- 6 cups vegetable broth
- 1 tsp thyme
- 1 tsp rosemary
- 2 cups kale or spinach
- Salt and pepper to taste
Instructions
- 1Heat olive oil in a large pot over medium heat. Add onion and cook until softened, about 5 minutes.
- 2Add garlic, carrots, and celery. Cook 3 more minutes.
- 3Add potatoes, broth, thyme, and rosemary. Bring to a boil, then reduce heat and simmer 20 minutes.
- 4Add green beans and white beans. Simmer 10 more minutes.
- 5Stir in kale or spinach and cook until wilted, about 2 minutes.
- 6Season generously with salt and pepper. Serve with crusty bread.
