Four peaches, a lemon, maple syrup, and a golden oat-coconut crumble on top - this is summer dessert at its most honest. The filling is barely sweetened to let the peaches shine, and the crumble gets crispy and golden in the oven. Serve warm.
Ingredients
- 4 peaches
- Juice and zest of 1/2 lemon
- 2 tbsp maple syrup
- 1 tbsp vanilla extract
- 2 tbsp oat flour (or all-purpose flour)
- 1/4 tsp cinnamon
- Pinch each ground nutmeg and salt
- 3/4 cup all-purpose flour
- 1/2 cup rolled oats
- 1/4 tsp each cinnamon and turmeric
- Pinch of sea salt
- 1/3 cup softened coconut oil
- 1/4 cup maple syrup
Instructions
- 1Preheat oven to 350°F and lightly oil your pan.
- 2Gently combine all crumble topping ingredients in a bowl. Refrigerate while you prepare the peaches.
- 3Mix all peach filling ingredients together and spread evenly in the oiled pan.
- 4Top with the crumble, using your fingers to mash it as you distribute it evenly.
- 5Bake for 45–50 minutes until the top is golden brown and crispy. Cool for 10 minutes before serving.
