Power Punch Sweet Potato Bites

Eight little pan-fried cakes made from mashed chickpeas, purple sweet potato, peas, and warm spices. They're crispy on the outside, tender inside, and endlessly versatile - eat them wrapped in spinach leaves, over rice, or straight from the pan.
Ingredients
- 1/2 cup chickpeas
- 1/2 cup purple sweet potato (roughly 1 medium), cooked
- 1/4 cup peas
- 1/4 cup breadcrumbs
- 1/4 tsp each cumin and paprika
- 1/8 tsp each garlic powder and ginger powder
- 2 tsp vegetable oil
Instructions
- 1Place chickpeas, sweet potato, peas, and breadcrumbs in a large bowl. Mash together with a potato masher, fork, or your hands - leave some whole chickpeas and peas intact for texture.
- 2Heat oil over medium-low in a skillet. Roll the mixture into 8 balls and flatten each one.
- 3Cook for 3–5 minutes per side, flipping gently once a lightly-fried surface has formed.
- 4Serve immediately - wrapped in spinach leaves, over rice, or as part of a wrap.

Non-purple sweet potato works just as well - but the purple variety makes these little cakes a stunning color that's almost too pretty to eat.
