Power Punch Sweet Potato Bites

Eight little pan-fried cakes made from mashed chickpeas, purple sweet potato, peas, and warm spices. They're crispy on the outside, tender inside, and endlessly versatile - eat them wrapped in spinach leaves, over rice, or straight from the pan.

Ingredients

  • 1/2 cup chickpeas
  • 1/2 cup purple sweet potato (roughly 1 medium), cooked
  • 1/4 cup peas
  • 1/4 cup breadcrumbs
  • 1/4 tsp each cumin and paprika
  • 1/8 tsp each garlic powder and ginger powder
  • 2 tsp vegetable oil

Instructions

  1. 1Place chickpeas, sweet potato, peas, and breadcrumbs in a large bowl. Mash together with a potato masher, fork, or your hands - leave some whole chickpeas and peas intact for texture.
  2. 2Heat oil over medium-low in a skillet. Roll the mixture into 8 balls and flatten each one.
  3. 3Cook for 3–5 minutes per side, flipping gently once a lightly-fried surface has formed.
  4. 4Serve immediately - wrapped in spinach leaves, over rice, or as part of a wrap.

Jennifer's tip

Non-purple sweet potato works just as well - but the purple variety makes these little cakes a stunning color that's almost too pretty to eat.
