All the fun of taco night, none of the guilt. This salad has everything you love about tacos - the crunch, the spice, the freshness - built on a base of protein-packed quinoa and topped with sweet mango salsa. It's a crowd-pleaser every single time.

Ingredients

  • 1 cup quinoa
  • 1 can black beans, drained
  • 1 ripe mango, diced
  • 1 cup corn (fresh or frozen)
  • 1 red bell pepper, diced
  • 1/2 red onion, finely diced
  • 1 jalapeño, minced
  • Juice of 2 limes
  • 1/4 cup fresh cilantro
  • 2 tsp cumin
  • 1 tsp chili powder
  • Tortilla chips to serve

Instructions

  1. 1Cook quinoa and let cool slightly.
  2. 2Combine mango, corn, red pepper, red onion, jalapeño, lime juice, and cilantro for the salsa.
  3. 3Season quinoa with cumin, chili powder, and a pinch of salt.
  4. 4Combine quinoa and black beans in a large bowl.
