All the fun of taco night, none of the guilt. This salad has everything you love about tacos - the crunch, the spice, the freshness - built on a base of protein-packed quinoa and topped with sweet mango salsa. It's a crowd-pleaser every single time.
Ingredients
- 1 cup quinoa
- 1 can black beans, drained
- 1 ripe mango, diced
- 1 cup corn (fresh or frozen)
- 1 red bell pepper, diced
- 1/2 red onion, finely diced
- 1 jalapeño, minced
- Juice of 2 limes
- 1/4 cup fresh cilantro
- 2 tsp cumin
- 1 tsp chili powder
- Tortilla chips to serve
Instructions
- 1Cook quinoa and let cool slightly.
- 2Combine mango, corn, red pepper, red onion, jalapeño, lime juice, and cilantro for the salsa.
- 3Season quinoa with cumin, chili powder, and a pinch of salt.
- 4Combine quinoa and black beans in a large bowl.
- 5Top generously with mango salsa.
