The ultimate cozy winter breakfast - slow-cooked oats enriched with quinoa, dates, coconut cream, and a warming blend of ginger, turmeric, and nutmeg. The quinoa adds protein and a lighter texture, making this more easily digested than all-oat porridge. Perfect for a slow morning in.
Ingredients
- 1/2 cup oats
- 1 1/4 cups water
- 1/2 cup precooked quinoa
- 3 dates, de-pitted and sliced into chunks
- 1 tbsp coconut cream
- 1 tbsp maple syrup
- 1 tsp hemp seeds
- 1 tsp ground flax
- 1/2 tsp each ground ginger, turmeric, nutmeg
- Pinch of black pepper
Instructions
- 1Cook oats in water on the stovetop until almost all liquid is absorbed, about 12–15 minutes for slow-cook oats.
- 2Stir in the quinoa, dates, coconut cream, maple syrup, hemp seeds, flax, and all spices.
- 3Cook for 3 more minutes on low heat, then remove from heat, cover, and let sit for a few minutes before serving.
- 4Garnish as you like - a drizzle of maple syrup or a sprinkle of extra hemp seeds works beautifully.
