Named for the foods it contains - magnesium-rich greens, omega-3-packed seeds, and adaptogenic herbs - this salad is genuinely good for your nervous system. It also happens to be delicious. Sometimes the most nourishing thing you can do is eat a beautiful salad.

Ingredients

  • 3 cups mixed greens (spinach, arugula, watercress)
  • 1/2 avocado, sliced
  • 1/4 cup pumpkin seeds
  • 2 tbsp hemp seeds
  • 1/4 cup blueberries
  • 1/4 cup shredded beets
  • For dressing: 2 tbsp olive oil, 1 tbsp apple cider vinegar, 1 tsp honey, 1/2 tsp turmeric, salt and pepper

Instructions

  1. 1Arrange greens in a large bowl.
  2. 2Top with avocado, pumpkin seeds, hemp seeds, blueberries, and beets.
  3. 3Whisk together all dressing ingredients.
  4. 4Drizzle dressing over salad and toss gently.
  5. 5Serve immediately.

Jennifer's tip

Turmeric in the dressing gives it a gorgeous golden color and anti-inflammatory benefits - add a pinch of black pepper to boost absorption.
