Named for the foods it contains - magnesium-rich greens, omega-3-packed seeds, and adaptogenic herbs - this salad is genuinely good for your nervous system. It also happens to be delicious. Sometimes the most nourishing thing you can do is eat a beautiful salad.
Ingredients
- 3 cups mixed greens (spinach, arugula, watercress)
- 1/2 avocado, sliced
- 1/4 cup pumpkin seeds
- 2 tbsp hemp seeds
- 1/4 cup blueberries
- 1/4 cup shredded beets
- For dressing: 2 tbsp olive oil, 1 tbsp apple cider vinegar, 1 tsp honey, 1/2 tsp turmeric, salt and pepper
Instructions
- 1Arrange greens in a large bowl.
- 2Top with avocado, pumpkin seeds, hemp seeds, blueberries, and beets.
- 3Whisk together all dressing ingredients.
- 4Drizzle dressing over salad and toss gently.
- 5Serve immediately.
Jennifer's tip
Turmeric in the dressing gives it a gorgeous golden color and anti-inflammatory benefits - add a pinch of black pepper to boost absorption.
