These little bites are summer on a plate - sweet, salty, fresh, and completely irresistible. They disappear at every party. The combination of juicy watermelon, creamy feta, fresh mint, and a balsamic glaze is one of those flavor combinations that just works.

Ingredients

  • 1 small seedless watermelon, cut into 2-inch cubes
  • 4 oz feta cheese, crumbled
  • 1/4 cup fresh mint leaves
  • 2 tbsp balsamic glaze
  • 1 tbsp olive oil
  • Flaky sea salt
  • Black pepper

Instructions

  1. 1Arrange watermelon cubes on a large platter.
  2. 2Scatter crumbled feta over the watermelon.
  3. 3Tuck fresh mint leaves between the pieces.

Make the balsamic glaze yourself by simmering 1/2 cup balsamic vinegar with 1 tbsp honey until reduced by half - it's much better than store-bought.
