These little bites are summer on a plate - sweet, salty, fresh, and completely irresistible. They disappear at every party. The combination of juicy watermelon, creamy feta, fresh mint, and a balsamic glaze is one of those flavor combinations that just works.
Ingredients
- 1 small seedless watermelon, cut into 2-inch cubes
- 4 oz feta cheese, crumbled
- 1/4 cup fresh mint leaves
- 2 tbsp balsamic glaze
- 1 tbsp olive oil
- Flaky sea salt
- Black pepper
Instructions
- 1Arrange watermelon cubes on a large platter.
- 2Scatter crumbled feta over the watermelon.

Make the balsamic glaze yourself by simmering 1/2 cup balsamic vinegar with 1 tbsp honey until reduced by half - it's much better than store-bought.
