Cold mornings call for a warm breakfast that actually sticks with you. This one comes together in about 15 minutes and is endlessly adaptable - use whatever fruit and nuts you have on hand. It's cozy, nourishing, and the kind of breakfast that sets a good tone for the whole day.
Ingredients
- 1 cup rolled oats
- 2 cups water or milk of choice
- 1 apple, diced
- 1/4 cup walnuts or pecans
- 2 tbsp almond butter
- 1 tbsp maple syrup
- 1/2 tsp cinnamon
- Pinch of cardamom
- Fresh or dried fruit to top
Instructions
- 1Bring water or milk to a boil in a small saucepan. Add oats and reduce heat to medium.
- 2Cook oats, stirring occasionally, for 5 minutes.
- 3Meanwhile, warm diced apple in a small pan with a drizzle of maple syrup and cinnamon until just softened.
- 4Spoon oats into bowls. Top with warm apple, nuts, and a dollop of almond butter.
- 5Drizzle with maple syrup and a pinch of cardamom.
